Y'all are pretty lucky living where all the great bbq is at hand. IMO there are no great places in Midland or here. We have Dickeys and the bbq place in one of the HEBs. A great great for me is the Rudys in Del Rio.

yesterday I poured a whole bottle of Salt Lick marinade on a chicken and covered it with onions, scallions, green and red peppers, let it soak for 5 hours and seared it at 550 for 10 minutes, then smoked it at 250 over Pecan for 3 hours. Pulled it off the bone and licked our fingers.
Whole chicken = $7.21
Salt Lick marinade= $5.00
onions and peppers = $3.00
Pecan wood pellets = $2.00
wine, beer, liquor = $140.00

gah.. sorry for the late update.. ended up going to Liberty BBQ with a friend and then went on a bender from hell.. yesterday was hangover and recoop day, and I've been up since 2am and just now starting to feel "normal" again lol.. ugh..
anywho.. Liberty was fun!
When I first saw their menu I noticed Deviled Eggs was way up top on the list, and I don't know about you guys but I that's a red flag in my book. Deviled eggs don't belong on a BBQ menu.. neither do salads.. BUT, the candied bacon on top was pretty damn tasty. Don't get me wrong, I'm not against deviled eggs, just wasn't in the mood for them. So why did I order them you ask? I didn't. The bartender is an old friend that has taken care of me for many years and jumped around a bunch of different spots. I had no idea this was her new spot. When I walked in and we recognized each other we both just cracked up. She brought them out on the house cause she is super cool. ok, I'll quit *****ing about the eggs..
Had to get my usual brisket and sausage with tater salad and beans (Convict Hill Oatmeal Stout up top).
Brisket - Little dry for my taste but I ordered the lean. The chunk on the left had a nice slab of fat that I immediately cut off, but when I realized the brisket was a little dry I called an audible and started putting little chunks of fat on each bite. Evened it out nicely.
Sausage - Solid.
Potato Salad - Probably the best thing I had that night. I know jack squat about what goes into a potato salad (mustard or mayo, and potatoes obviously), but whatever they did it was great.
Beans - This one threw me off. I was expecting a "ranch style" BBQ beans taste, but when I went in they were more like Mexican beans, which I LOVE, just wasn't expecting it. Still darn tasty.
Sauce - I KNOW, I KNOW, some of you purists will give me crap about it but I totally dig BBQ sauce, and theirs was pretty darn good.
Pickles - probably came out of a jar they bought at HEB but they were great. Funny how those little things help to round out the BBQ experience.
Overall stupid fun time. I'm guessing it would have put me back $30 to $40, but with Amanda (the bartender) giving us the eggs on the house and my buddy picking up the tab, I walked outta there full, sleepy, and not a dime spent. We then proceeded to The Brass Tap right down the street and everything went downhill after that lol..
I would give it a 3.5 out of 5. Will definitely try it out again in the future.👍 3Comment
