What was the name of the old BBQ joint in Odessa in the 70's-80's? There was another small hole in the wall over in Monohans called Reds or Fred'd BBQ. Old house with booths. Ate there a few times by in my oilfield sales days.
Reminds me of Cub's in Georgetown in early 80s, Cub had a couple of utility spools turned up as tables and served Brisket, Ribs, and Sausage off of 4 old 55g drum smokers on Fridays and Saturdays just SW of the Courthouse square. $5/plate or $10/all you can eat. Good memories.

    • If y'all opened your own BBQ joint what would y'all name it? I love the names of these places.

Asked for them to pull out a fresh brisket, they did. I asked for the tip trimmed and sliced, they did. Had 1/2 lb of brisket, 1/2 lb of sausage, twice baked potato salad, and blackberry cobbler. The free Pinto Beans with jalapenos were great. Was absolutely phenomenal. Brisket was moist with big smoke ring, sliced properly and melt in mouth finish. Very pricey as lunch for two of us was $60. I'd do it again though. Very, very good. and y'all were right the atmosphere is excellent.
Think they have beef ribs? If they can do a brisket like you said...

Don't know, good reason to go back.

Ha! Would you also do chicken foot voodoo blood offerings?

But we would only be open every odd year.

It would be a place where all my regular customers can come and bit(h about the pitmaster and talk about how he should be fired.

And if you show proof of Colleyville residency you get coupons to Whataburger with every meal.

                        • Unfortunately every even year T's Up BBQ suffers catastrophic fires and has to shut down the whole year.

If you're lucky, you might get the Fired Up dude to come in and tell you how Cali BBQ is better than Texas. Lol

Speaking of California. Anyone like throwing tri-tip on? Ain't gonna lie. It's one of my favorite cuts.
